Instructions
Preheat your waffle iron.
Mix the eggs, milk, pumpkin puree, olive oil, honey and baking soda in a large bowl.
In a separate bowl, mix the flour, baking powder, salt, pumpkin pie spice and cinnamon.
Gently combine the flour mixture into the wet ingredients, stirring until well mixed.
Spray the waffle iron with cooking spray or a little butter and cook per manufacturer instructions.
Top with whipped cream, maple syrup and a little sprinkle of cinnamon.
