This homemade pancake mix makes it easy to whip up a batch of buttermilk pancakes at a moment’s notice. Plus, DIY pancake mix is a perfect gift for almost any occasion.
To make the dry pancake mix (makes enough to fill a 1 liter / 34 ounce jar for 3 batches)
In a large bowl, whisk all the ingredients together.
Carefully scoop and transfer into your desired jar. If it's easier, roll up a piece of parchment or wax paper diagonally to create a funnel to help.
To make one batch of the pancakes
In a large bowl, add in 1 ½ cups of the dry pancake mix. Whisk in the buttermilk, egg and butter.
Preheat a griddle on medium to medium-high heat. Brush on a bit of butter or oil on the pan. Pour or scoop the batter onto the griddle, using about ¼ cup for each pancake. Cook until there are bubbles on the surface, the underside of the pancake is lightly golden, and the edges are starting to look dry. Flip and cook for an additional 1-2 minutes until the other side is light golden.
