Lay the bacon strips in a large 12-inch (30-cm) skillet so they are not overcrowded. Place the pan on the stove and cook the bacon on medium heat. As the bacon cooks, it should start to release grease. Flip the bacon with tongs several times as it cooks, until the bacon is cooked through, about 5 minutes. If you prefer crispy bacon, you can leave it on a bit longer. Remove the bacon with tongs and set aside.
Turn the heat to medium-high heat. Add the potatoes into the skillet and cook, stirring frequently. Cook until the potatoes have softened, about 12-15 minutes.
In the meantime, chop the bacon into ½-inch pieces. Set aside. In a large bowl, beat together the eggs, milk, salt, pepper, and garlic powder. Set aside.
When the potatoes are ready, add in the onions and cook another 3-4 minutes, until the onions have softened.
Turn the heat down to medium. Add in the eggs and bacon. Cook, stirring every once in a while, until the eggs are just about set, about 3-4 minutes. Remove the pan from heat and stir in the cheese.
