Start the day with Healthy Apple Muffins! This easy breakfast muffin recipe is packed with nutrients, fiber and protein. Made with whole grains and fresh apples. This recipe is perfect for the family and is a healthy kids muffin.

Preheat the oven to 350°F / 180°C. Grease or line a muffin tin.
In a large bowl, mix together the flour, oats, almond flour, brown sugar, flaxseeds, cinnamon, baking powder and baking soda. Fold in the grated apples.
In a medium bowl, beat the eggs. Beat in the yogurt, applesauce and butter.
Pour the egg mixture into the apple mixture, and fold together, being careful not to over mix.
Evenly divide the batter into the prepared muffin tin. Each muffin cup will be about ⅘ full.
Bake for about 20 minutes at 350°F / 180°C, then turn the heat up to 375°F / 190° C, and bake another 8-10 minutes, until a toothpick inserted in the middle comes out clean. Remove from oven and transfer to a cooling rack. Allow to cool slightly before serving.
Notes
Leftover muffins store best in an airtight container in the refrigerator. Slightly warm before serving.
