    If there's one breakfast recipe that has eluded me, it's homemade chocolate waffles.

    For more than 365 mornings, I've woken up thinking "I'm going to make homemade chocolate waffles today," and for more than 365 nights, I've gone to bed thinking "Oh I'll get around to it tomorrow." Well, today that all changes.

    This dark chocolate waffle recipe is perfect for an indulgent brunch

    I'm finally sharing a recipe for dark chocolate waffles. And it's an easy recipe that is truly indulgent and fantastic.

    I finally got my push to develop this dark chocolate waffle recipe when my in-laws visited and asked for something with chocolate for breakfast. When you are a brunch blogger and have brunch guests that request a certain breakfast - you get to making it!

    When you crave a chocolate breakfast, this dark chocolate waffle will hit the spot

    So voila, I present to you, Dark Chocolate Waffles with Mascarpone Whip. When the craving for a chocolate breakfast hits, I hope this becomes your go-to breakfast.

    Both the Dark Chocolate Waffles and the Mascarpone Whip are straightforward to make, which gives you time to think about how you want to top it.

    With the rich chocolate flavor and the creamy mascarpone to complement it, you don't necessarily need any syrup on this dark chocolate waffle. A finish with a simple dusting of powered sugar is plenty.

    If you do want something a little more decadent, I would recommend topping it with chocolate syrup rather than the usual maple syrup because of the flavor profile. It will be a double chocolate breakfast!

    How to make dark chocolate waffles?

    This chocolate waffle recipe is easy to make, but you will need three separate bowls. I don't typically like lots of dishes, so I try to combine steps often. But take the time and don't cheat, and you'll reward yourself with a fantastic breakfast.

    In one bowl, mix together the dry ingredients powder ingredients. This would include ingredients such as flour, cocoa powder, baking powder and salt.

    In a second bowl, beat together the egg yolk and other creamy ingredients - sugar, milk, oil and vanilla.

    Whip the egg whites until soft peaks form to help make these chocolate waffles fluffy

    The third bowl is the important bowl, and it's for whipping together the egg whites. You want to whip the egg whites together until soft peaks form.

    This is what will help add air to the waffles. Then you slowly fold the whipped egg whites into the batter.

    How to make the mascarpone whip waffle topping

    The mascarpone whip cream in this recipe is easy and decadent. It makes a perfect topping for this easy chocolate waffle because it's not too sweet, and it's creamy.

    Simply whip mascarpone, double cream, sugar and the beans from one vanilla pod all together with a hand mixer for about 10 seconds. The trick is not to over beat it.

    The more you beat it, the stiffer the mascarpone whip will get. If you keep beating it, it will suddenly reach a tipping point and become grainy and over whipped.

    Dark Chocolate Waffles with Mascarpone Whip

    Ingredients

    Dark Chocolate Waffles

    • 2 cups all-purpose flour (280 grams)
    • ½ cup cocoa powder (48 grams)
    • 4 teaspoons baking powder
    • ½ teaspoon salt
    • 3 eggs - separated
    • 1 ¾ cup whole milk (420 milliliters)
    • ⅓ cup sunflower oil (80 milliliters)
    • 2 tablespoons granulated sugar
    • 2 tablespoons light brown sugar
    • 1 teaspoon quality vanilla extract

    Mascarpone Whip

    • 1 cup mascarpone (210 grams)
    • ⅔ cups double cream (160 milliliters)
    • 1 tablespoon granulated sugar
    • 1 bourbon vanilla bean
    • powdered sugar (for serving)
    • fresh raspberries (for serving)

    Instructions

    Make the dark chocolate waffles

    • In a medium bowl, sift together the flour, cocoa powder, baking powder and salt.
    • In a separate medium bowl, beat together the egg yolks, milk, oil, sugars and vanilla extract.
    • In a separate medium bowl, beat the egg whites until soft peaks form.
    • Add the flour mixture into the egg yolk mixture, and mix until well combined. Gently fold the beaten egg whites into the batter. The batter will be a thick liquid consistency.
    • Pour or scoop the mixture into a hot waffle iron (I used a ¼ cup measuring cup for each waffle, but waffle makers vary). Cook waffles for 3½ - 4 minutes, until cooked through. Once done, transfer the waffles to a cooling rack.

    Make the mascarpone whip

    • Add the mascarpone, double cream and sugar into a medium bowl. Slice the vanilla pod in half and scrape out the seeds into the bowl.
    • Using a handheld beater, beat everything together on low speed until just mixed, about 10 seconds.

    To serve

    • Top the dark chocolate waffles with a generous scoop of the mascarpone whip, a few raspberries and a dusting of powdered sugar.

      Even if this was not a phenomenal and decadent breakfast idea (for which it most certainly qualifies,) your photos are museum-worthy! I am a long-diagnosed chocolateholic and yet have never had waffles made from my most addiccice. These look incredible.

      I'm with you sister! I am a chocoholic and my husband doesn't like it very much. And don't even get me started with the coffee, he keeps away from me after I've had my morning coffee. He hates the smell of coffee! How weird is that! These waffles though, I'd want to stack them, ice them like cake and just have at it!

      You married a man who doesn't like chocolate. Is that even possible? These waffles look delicious. Frankly, you had me with dark chocolate, but sealed the deal when you topped them with raspberries. Yum.
