Our new baby is now 6-weeks old, and I'm finally feeling a bit more settled. We have a bit of a nice routine - feed, burp, (try to) set down, repeat. Notice that I say "try" to set him down, because more often than not, as soon as I tip toe away from the moses basket, he's awake within 5 minutes and hungry again. We love it for brunch too, served with some chips (crisps, as they are called in the UK) and an apple. And if I have the time, I like to pair it with a simple green salad.

I used Red Leicester cheese because I like the slightly sweet and nutty taste of it. You can definitely make this Raisin Bread Grilled Cheese with your favorite cheese. Sliced cheese or shredded cheese both work too. It's such a simple recipe that it's hard to go wrong.

Someone asked if I discovered the pairing of raisin bread and cheese during the time that I was pregnant (like it was strange pregnancy craving that I had). Of course not, I said. If they can serve grapes with cheese and crackers for pre-/post-dinner, why not raisin bread and grilled cheese for breakfast/lunch??
Raisin Bread Grilled Cheese

- 2 slices raisin bread
- ½ tablespoon butter
- 1 slice Red Leicester cheese
Instructions
- Preheat a panini grill, skillet or grill pan on medium heat.
- Spread a thin layer of butter on one side of each slice of bread. Place the Red Leicester on a slice of bread, with the buttered side facing down. Close the sandwich with the buttered sides facing out.
- Place the sandwiches on the grill and cook on both sides until golden brown and the cheese is melted, about 3-4 minutes on each side (or about 4 minutes in a panini grill).
- Serve immediately.

I made this for the first time about 10 years ago, I have no idea what made me think to try it, but am I ever glad I did. I make mine with jalapeño cheese though, it’s amazing! My tastebuds never know what hit them.
