    You might call this a country breakfast skillet or a farmers breakfast skillet. It's loaded with ingredients that are hearty and filling. So dig in, and pretend you are on that ranch about to put in a hard day's work.

    But let's be real. I'm a city girl, and this sausage potato breakfast skillet isn't just meant for the country or farmers. It's a dish you want to set on a table for your brunch squad on lazy weekend mornings.

    You'll love this simple recipe to make sausage breakfast skillet

    The great part about making this easy breakfast skillet recipe is that everything can be done in one pan. Just start cooking everything on the stove top, and then finish it off in the oven.

    It's easy to throw this one pan breakfast together, and you can swap out the veggies for what you have in your fridge. It also cooks quicker than a traditional breakfast casserole since you start it on the hob.

    Because this recipe finishes in the oven, you can step away for part of the cooking time. Go chat with your guests or set the table as this hearty brunch finishes up cooking.

    Like a breakfast casserole, you can serve this hearty breakfast skillet to a large group all at once. When I use my 30-cm skillet, I can feed up to 8 people. Or if I don't have 8 people to feed, it saves well as a breakfast-for-dinner.

    How do you cook a breakfast skillet?

    So you ready to get cooking? The full recipe is below, but I'll run through some of the tidbits here and provide some tips as well.

    What do you need to make this recipe?

    It's an understatement to say this is a loaded breakfast skillet. These are the ingredients you'll need / that I suggest:

    • potatoes
    • sausages
    • onions
    • mushrooms
    • red and green bell peppers
    • eggs
    • cheese
    • (I eat it plain, but it's also great with a touch of hot sauce)

    The most important part of making a breakfast skillet is to use a skillet that's non-stick and oven-proof. In the pictures, I use a Circulon Momentum Hard Anodised 30cm Frying Pan.

    I've actually used Circulon pans for years, so I'm very excited to work with them to bring you this easy breakfast recipe. There's so much good to say about Circulon, so feel free to email me directly if you are interested in learning more.

    But here are the highlights that make this pan perfect for breakfast:

    • Tried and tested (by yours truly), it's non-stick so you get a beautiful breakfast that's easy to serve.
    • It can go into the oven up to 400°F / 204° C. Hot enough that you can can use it to cook eggs in the oven, giving you access to a lot of breakfast recipes.
    • The skillet is dishwasher safe (!), meaning easy clean up.

    See the circular grooves in the pan below? They are cleverly designed to create air pockets, so egg and cheese (which are both sticky) easily release.

    The high parts of the grooves also help protect the base of the pan from scratches caused by cooking utensils. So don't worry when you sauté the ingredients, or when you are serve a slice of this hearty breakfast skillet to your guests.

    What is the best way to cook this hearty breakfast skillet?

    The best way to cook a this recipe is to stagger when you put in the ingredients. This recipe is loaded with many ingredients, and each of those have a different cooking time.

    So add the ingredients in order of what needs to cook the longest. In this case, start with the potatoes. Then the onions and sausage meat. Then you add the mushrooms and peppers.

    Once the vegetables are sautéed, pour in the eggs and allow this baked breakfast skillet to set in the oven

    Lastly, you pour over the egg and cheese, and let it finish baking in the oven. By baking the eggs and cheese, you end up with a breakfast skillet casserole that looks beautiful and holds together when plated.

    Not that there's anything wrong with a plate of scrambled breakfast, but guests will be pleasantly surprised with a less-common slice of baked breakfast skillet.

    Tip: Use this recipe for homemade breakfast sausage. It's quick and easy to make, and you avoid the fillers that store-bought sausage meats contain.

    Make this easy breakfast skillet for your next brunch. Your guests will love this loaded breakfast skillet that's packed with sausage, potatoes, and eggs. This recipe starts on the stovetop, but finishes with a quick bake in the oven.

    Ingredients

    • 2 tablespoons oil or butter
    • 1 pound baby potatoes - cut into 1-cm pieces
    • 1 medium onion - diced
    • 1 pound sausage meat
    • 1 medium green bell pepper - diced
    • 1 medium red bell pepper - diced
    • 5 ½ ounces mushrooms - chopped
    • 8 large eggs
    • 1 cup grated cheddar cheese
    • salt - to taste
    • pepper - to taste
    • green onions - for garnish
    US Customary - Metric

    Instructions

    • Preheat the oven to 375°C / 190°C. 
    • Heat the oil or butter in a large (30-cm) oven-proof nonstick skillet on medium-high. Add in the potatoes. Sauté for about 2 minutes. The potatoes should be coated in the oil or butter by now.
    • Add in the onions and sausage meat, and continue to cook for about 2 minutes, breaking apart any large clumps of sausage meat with a spatula. At this point, the potatoes may be starting to brown on the outside, but will still be firm inside.
    • Add in the red and green bell peppers and mushrooms, and continue to cook about 2 minutes, until the peppers and mushrooms begin to soften. The ingredients won't all be cooked through at this stage and it's ok. We're sautéing the fresh ingredients to get out some of the water content and to brown the edges. They will finish cooking in the oven.
    • In the meantime, beat the eggs together in a medium bowl, and stir in the cheese. Gently pour the egg mixture into the skillet. Slowly stir everything around a few times. The hot pan will cause the eggs to start cooking a bit, which is fine.
    • Transfer the pan into the middle rack of the oven. Bake for 20 minutes, until the eggs are just set in the middle. Remove from oven and allow to rest for 5 minutes. Serve immediately.

    Tip: Make this recipe with homemade sausage meat. You will need ½ the recipe of this homemade sausage meat. Freeze the rest into breakfast sausage patties.
