- 4 ounces cream cheese (about ½ cup)
- 4 large eggs
- 3 tablespoons almond flour (I always use unblanched almond flour)
- pinch of salt (optional)
- butter - for cooking the pancakes
Instructions
- Blend everything together in a blender to make the pancake batter. It is a very thin batter.
- Heat a griddle on medium heat. Melt a bit of butter on the pan. Slowly drop the pancake batter on the griddle using a tablespoon. The pan should be hot enough so the pancake batter starts to cook immediately on contact. As the pancake batter is runny, to get circular pancakes, slowly pour on the pancake batter so it thickens as it comes in contact with the griddle. That way, the batter doesn't all quickly spread around the pan in random shapes.Help spread the batter outwards and into a circle shape with the back of a spoon. Use 2 tablespoons of batter per pancake for 3-inch pancakes.Alternatively, to make it quickly if you aren't bothered by perfectly circular pancakes, simply pour on the pancake batter and allow it to spread evenly across the pan. Cook for about 1 minute, then flip and cook for another minute or so, until cooked through.

I'm the only "keto" in my home of 4 and since I don't believe in waste, I always finish even the most unappetizing keto substitutes. To that end, I quartered the recipe so as not to have to eat too much nasty..joke's on me coz this was delicious...yummy yummy...it's the best keto pancake I've had in my 2.5 months of trial and error. This is my favorite recipe, it’s a very thin batter so I add a few extra teaspoons of almond flour. The key is to pour the batter onto the skillet SLOWLY! So that it starts cooking right away. And make sure the skillet is hot before you pour. I add cinnamon and sometimes vanilla extract. I’ve made these pancakes at least 5 times, I’m not currently on a keto specific diet but I like these because they are pretty low cal!

I think 1 serving is 1 pancake because the calories is 52 kcal so my assumption is that’s just 1 pancake. I could be wrong

Loved the recipe, im on the code red diet (similar) and when I found this I was so excited to learn there is also a keto syrup too! The only thing I did differently was how the mixture was blended, made the pancakes fluffy. Separate your eggs and beat your whites until whipped and thick. Blend the rest separately, then gently mix the two. Mmm. Thanks for the recipe:)

Hi ! Nice recipe ! They look yummy. Tried those this morning, I made small modifications in the proportions... 3 eggs instead of four, I have very large eggs. The batter is really funny, what do you think about adding something like 1 tsp powdered chia, to have something less water-like ?
