Lately, I've been reading more and more about food waste and how to combat the issue. It's an uncomfortable topic to discuss because there is so much hunger in the world, and still, globally, we waste 2.9 trillion pounds of food a year - a third of the planet's production!
It's been sitting on my mind that I'm part of the problem. And yet there are very simple things that I can do to help combat food waste, and I must admit that I don't currently do them.
This Orange Carrot Ginger Juice is a small step that I'm taking to help combat food waste. In my excitement to make this juice, I forgot to take a photo of these oranges and carrots beforehand.
Juicing is a simple and healthy way to use up ugly fruits and vegetables
But these oranges and carrots were considered "ugly"produce. I bought them at a discount, and they sat in a brown paper bag marked as ugly "for juicing" because they weren't cosmetically perfect enough to be displayed.
To give you a figure, 46% of fruits and vegetables never make it from farm to fork. Of that amount of waste, a part of it is fruits and vegetables that are perfectly fine to consume (like the juicing carrots and oranges I used for this recipe), but are wasted for reasons that can avoided.
Have excess produce in the fridge? Make a homemade juice!
Many produce items simply don't meet the cosmetic requirements that we have become accustomed to seeing, or don't get purchased from the store's shelf in time. Or they are bought and not used before they perish in the back of a refrigerator.
These days it's not very difficult to find ugly fruits and vegetables, and juicing is a great way to use ugly fruits and vegetables. It's also a healthy and easy way to quickly consume excess produce before it goes bad in your refrigerator.

In any event, this recipe isn't an original creation, and you might feel that you don't even need a recipe to make Orange Carrot Ginger Juice. But I wanted to share this juice recipe because it's our favorite juice recipe, and a really easy blend to make for juice enthusiasts of all levels.

You can make this Orange Carrot Ginger Juice sweeter by using more oranges, or adding in apples. Or you can make it more vegetable heavy by adding in celery. But as it is, this Orange Carrot Ginger Juice is a healthy and delicious homemade juice to serve at breakfast.
Orange Carrot Juice is healthy (in moderation)
Orange Carrot Juice offers many benefits. Orange juice is loaded with Vitamin C. Carrot juice will give you lots of beta-carotene, as well as B-vitamins, potassium and other minerals.
You also benefit from the anti-inflammatory properties of ginger juice with this recipe.
Just keep in mind that because you are running this recipe through a juicer, you lose the benefits of the fiber typically found in fruits and vegetables. So drink this Orange Carrot Ginger Juice to increase your vitamin and mineral intake, but don't let it replace your normal consumption of fruits and vegetables.

- 8 medium (about 1.5 pounds) carrots - scrubbed clean and tops cut off
- 8 medium (about 3 ¼ pounds) juicing oranges (depending on your juicer, you may need to cut the peels off)
- 1 3-inch knob fresh ginger - peeled

- Place everything in a juicer. Serve immediately.

With the vitamix you don’t need to peel carrots or apples... if your Ginger is organic, you don’t have to peel it either! Enjoy!!

First off, this sounds and looks delicious - makes me want to go buy a juicer ASAP! Secondly and even more importantly, I couldn't agree more about the tragedy of food waste. I know that I, too, am guilty of wasting a lot, and love the idea of juicing as a way to reduce what I throw out or compost. I'm proud that some alumni of my university recently started a small business using fruit deemed too "ugly" to sell in the same way - I believe it's called Misfit Juicery. I haven't personally tried their products yet, but I love the idea so much!
