The honeydew melon is a natural thirst quencher in itself, but this recipe also uses coconut water to give you more hydration. Mint Honeydew Smoothie (Vegan, GF, Dairy-free)

- 3 cups cubed honeydew
- ½ cup coconut water
- 1 tablespoon fresh mint leaves - stems removed
- ½ tablespoon honey (sub maple syrup for a vegan recipe)
- 1 handful ice cubes
Instructions
- Place everything in the blender and blend until smooth.
- Serve immediately as the honeydew will naturally separate from the liquid.

This smoothie is tasty. Sugar is a great emulsifier. I put a couple tablespoons of sugar in place of the honey and had no problem with the honeydew separating. I don't know if it made any difference - I didn't have coconut water, but I had coconut milk and that worked niely.
